Hi J,
Welcome to BuddyDev.Can you please check and see if there is any file generated with error when you upload the video(in the MediaPress’s newly uploaded video directory)?
I haven’t used the video embed thumbnail plugin but if they are able to generate thumbnail from dashboard for all video, it should work fine with MediaPress.
MediaPress uploads are normal attachment with custom upload location. Please try regenarting via them and see if it works.

Could it be that WordPress 5.6 or BuddyPress 7 upgrades have broke something with the encoder?

Thank you for the reply.I am sorry, all the images you shared have restricted access and I am unable to see it.
We have tested the plugin over Ubuntu distributions and it has worked. Our team will try the same on mac os and get back to you.
