To disable tab in directory, Please un-check “List in directory?”
Since you have excluded the users from directory listing, It is not displaying them.

The above is correct way to create custom actions and attaching to those action.I am not sure what you want to accomplish, but it seems you want to display group data somewhere?
To do that, you will need group id. If you want, you can pass group id as the 2nd parameter of the do_action function.
PS:- If the goal is to only display fields data, creating custom hooks may not be needed.

Thank you for the question.There are 2 possible reasons for it:-
1. The tables were not created. Please use phpmyadmin and check if tables were created for the sub site(prefix_number_bp_xyz where xyz is table name)
2. If yes, You most probably haven’t added any one to this this sub site. Please add a user to this sub site and then make sure that user visits it at least 1 time(last active time needs to be recorded).
PS:- I am sorry but I could not understand what you meant by activating BuddyDev support option? Please clarify.

Thank you for the update.The BuddyPress page templates follow a different structure.
To override registration page, Please create buddypress/members/index-register.php and this page will be used for registration page.
